Brewster will open their cafe inside your museum, which will attract notable characters to visit for a cup of coffee. How to find Brewster in Animal Crossing: New Horizons
Before you can open the Roost on your own island in Animal Crossing: New Horizons, you'll first need to find Brewster. Enter your museum and talk to Blathers, who should have a thought bubble above his head. Blathers mentions that he wants to open a cafe, but can't find Brewster. It talks about Brewster's love of gyroids, which can be found on Kapp'n tours and that's exactly where this pigeon is hiding.
While Blathers doesn't provide any dialogue on Brewster, there are a few options to try out players on Reddit and social media seems to think that you must have donated at least one fish, one bug, one fossil, and one sea creature and that your island must have a rating of 3 stars or higher, which can be checked out at Resident Services by speaking to Isabelle about "Island Eval". You may also need to sync your game time with the internet if you have time traveled.
Once you receive Brewster's photo from Blathers, head to your island's dock, where Kapp'n is now permanently located. Ask him to take you on a tour, which costs 1 Nook Miles and can only be done once a day, so make sure you've spoken to Blathers beforehand. When you arrive, look for Brewster around the island and talk to him. Tell him Blathers sent you, and despite the ensuing dialogue, your mission is complete. Go back to your island and talk to Blathers.
Blathers will be glad you found Brewster and claim he'll "make his way here immediately." Which translates to three days. Nothing will change on the first day, but the museum will be closed for renovations the next day. On the third day, the Roost will finally open at the top left of your museum!
